The weather has still been warm but starting tomorrow it is supposed to drop. I can't wait! In the meantime we have been continuing to add some more autumn touches to our home. Here is the recipe: </div><div style="text-align: center;"><br /></div><div style="text-align: center;"><span style="font-size: large;"><b>Pumpkin Spice Bundt Cake</b></span></div><div style="text-align: center;"><br /></div><div style="text-align: center;">1 (18.5 oz) yellow cake mix</div><div style="text-align: center;">1 (3.4 oz) package instant vanilla pudding mix</div><div style="text-align: center;">1 (15 or 16 oz) can of pumpkin</div><div style="text-align: center;">1/2 cup vegetable oil</div><div style="text-align: center;">1/2 cup water</div><div style="text-align: center;">3 eggs</div><div style="text-align: center;">2 tsp. pumpkin pie spice (optional) *</div><div style="text-align: center;">1/2 cup pecans (optional - we aren't big pecan fans so we don't use them)</div><div style="text-align: center;"><br /></div><div style="text-align: center;">Heat oven to 325 degrees. Grease and flour either a 10 or 12 cup Bundt Pan.  In a large mixing bowl combine all ingredients except for pecans. Mix on medium speed for 2 minutes, then increase speed to medium/high for another three minutes. If you are adding nuts, stir them in. Spoon batter into prepared pan. Bake at 325 degrees for 45 to 55 minutes or until a toothpick inserted in center of cake comes out clean. Cool for ten minutes. (I always shake it when I pull it out of the oven first and then let it cool).  Remove from pan and let cool completely on rack. I recommend just adding it to one or the other. My, how time flies. It seems like just yesterday we were busy planning out all the details and I was knee deep making invitations, programs, seating charts and all the other fun things that go along with a wedding. I had planned on doing a post yesterday showing all of those items but the weather here has been rainy which does not go well with shooting detailed photos.<br /><br />Our actual day yesterday wasn't too exciting. In fact we barely even got to see each other. Jon did go out for a fancy dinner - just not with me, haha. Some recruits were in town for their official visit so while he was dining on steak I was eating takeout Moe's with the girls....very romantic. =) Don't feel too badly for me, though. We went out for a delicious meal on Tuesday at my favorite restaurant and he surprised me with a completely unexpected gift. It was so sweet and I was so shocked to see it when I came down the stairs earlier this week. It made it even more special when I found out he had actually bought it a few weeks ago and was just waiting to give it to me. I couldn't believe he had thought so far ahead of time.<br /><br />Again, thanks to the lovely rain and therefore the horrible lighting in our house, I couldn't get any good shots of it.
